Process | Natural Mosto
Varietal | Sidra
MASL | 1450
Grown at 1,450 metres above sea level on El Vergel Estate near Fresno, in Colombia’s Tolima region, this coffee comes from the Bayter family, who began growing coffee on the farm in 2010. Elias and Shady Bayter have since become known for innovative processing, and in 2019 the family founded Forest Coffee, which now works with around 250 coffee-growing families. This lot is Sidra, a rare and sought-after variety. The whole cherries ferment for 72 hours in sealed tanks seeded with mosto, liquid saved from an earlier fermentation, before drying slowly in a silo and then in the sun. The result is a lively, fruit-forward cup of apple, banana and strawberry, with citrus and floral notes.
A little heads up — this coffee is freshly roasted to order and can be purchased online only.
