Indonesia | Kerinci Gunung Tujuh, Sumatra
Cup characteristics: Caramel, Purple Grape, Blueberry
This is the second coffee from the Koerintji Barokah Bersama Coop, which is made up of 320 small holders in the Kerinci Gunung Tujuh district, in Sumatra's west. The Cooperative gives the farmers more leverage by assisting them with getting better prices for their cherries. They also share resources, organize training and in doing so, future proof their practices.
Process | Wet Hulled Honey
Varietal | Andung Sari, Sigarar Utang
MASL | 1400-1700
A slight variation on the previous lot, this coffee is a wet hulled honey process. This means that slightly more of the sugary layer between the coffee bean and the outer cherry layer (the mucilage) has been left intact during the fermentation of the cherries. This is a new concept for indonesian coffee and adds subtle complexities to an already amazing cup.
